AKWA AND Efik Style Okra Soup

 



Otong Soup – AKWA AND Efik Style Okra Soup

Otong soup is a popular traditional Okra soup recipe from the Efik people of Cross river, South Eastern Nigeria. Otong soup is very similar to the Yoruba Okra Soup; 


Ila Alasepo. The major difference is the addition of Ugu leaves which isn’t a requirement in the preparation of Ila Alasepo.

If you cant source Ugu leaves


, you can use spinach, Water leaves or Kale instead. If you cant source Uziza leaves, which is optional anyway, you can use ground Uziza seeds insead.

Ingredients:

30-40 pieces Fresh Okra

1 Cooking spoon Palm oil

Assorted meats (Shaki, Ponmo, Cowfoot, Beef, Goat meat and Offals are ideal)

2-3 Pieces Stock fish

2 Medium size Smoked fish

Fresh prawns (Optional)

Smoked prawns

1 Cooking spoon Crayfish

2 Cups Chopped and washed Ugu leaves (substitute for Spinach, Water leaves or Kale)

Handful Uziza leaves, chopped and washed (Optional)

1 Onion

2-3 Scotch Bonnet (Ideally Yellow Nsukka Pepper)

Knorr Chicken Cubes/ Maggi Crayfish

Salt to taste

Preparation:

Pound in a mortar or chop the Okra with a processor. I prefer to chop 3/4 finely with a food processor then chop the rest by hand cos I love my Okra with a bit of crunch. If you want it chunky all through, with little or no elasticity, then you can chop the entire Okra. I prefer mine both ways.



FOOD : HOW TO COOK Edikaikong Soup

 


 

(Edikaikong Soup)


Edikaikong soup is the real vegetable soup of the Ibibios or Efiks people of South South region in Nigeria. The soup 

  1. Before cooking, I like to pick, wash properly and allow to drain then slice all the vegetables. Ugwu, water leaves and scent leaves. Put each in separate bowls.



  2. Wash you Meats, seasons accordingly and cook till almost tender, then add the washed Stockfish head and cook... Make sure the meat stock is almost Dried...we don't need water in the soup, cause the water leaves and palm will generate stock for the soup.



  3. Before the stock Dried out completely, add water leaves, pour in the palm oil, add Periwinkles, pounded fresh pepper and stir properly. cook for 3-5 mins. (Ensure you don't over cook the water leaves)



  4. Add in Ugwu, scent leaves, pounded shrimps, smoked fish, black pepper, stock cubes and stir the content of the pot very well..Cover the pot and leave to cook for



  5. Lastly, according to my Grandma's recipe, you add the pounded Crayfish and taste for salt, give it a stir and that's it.(pls be mindful of the salt and stock cubes, cause vegetable soup can easily become salty)

  6. Remove from fire and enjoy with Fufu, Pounded Yam, Semo, Samvita or even Eba.



  7. Ingredients

     6-8 servings
    1. 500 g water leaves
    2. I kg (5 bunch of Pumpkin leave) ssameame as Ugwu
    3. 2 handful Ntong (scent leaves or Effirin
    4. I kg Assorted Meat
    5. Ponmo
    6. 200 ml (2 cups) Palm oil
    7. I medium onions
    8. I Cup of periwinkles
    9. Head I Large stockfish
    10. 2 Medium Sized Smoked Fish
    11. 6 fresh Yellow pepper (pounded)
    12. I Cup pounded Crayfish
    13. 1/2 Cup Dried Shrimps (slightly pounded)
    14. 1 tbs black Pepper
    15. 2 stock cubes

NEWS : COVID-19 second wave Gov Sanwo-Olu imposes curfew, bans parties in Lagos






 Governor Babajide Sanwo-Olu of Lagos State, on Friday, banned all forms of parties and carnivals in the state.

Sanwo-Olu issued the directive amid the resurgence of COVID-19 in the state.

The governor, in a statement, also imposed a curfew from midnight to 4am daily.

The directive is aimed at curbing the increase in Coronavirus across the state.

However, Sanwo-Olu also ordered night clubs to remain closed till further notice.

The governor further emphasized the need for residents of the state to wear their facemask.

According to Sanwo-Olu: “Concerts, carnivals and street parties are banned in Lagos State until further notice.

“Night Clubs have not been allowed to open yet. All night clubs in Lagos must immediately shut down, until further notice.

“The midnight to 4a.m curfew imposed by the Federal Government remains in place.

“The protocol of ‘no mask no entry’ must be enforced by all public places: offices, businesses, markets, shops, and so on.”

NEWS : Kankara, Details of what Buhari told released students in Katsina

 


President Muhammadu Buhari, on Friday, urged the released students of Government Science Secondary School, GSSS, in Kankara, Katsina State to stay focused on their studies.

Buhari urged the students not to allow their experience with bandits distract them from their studies, NAN reports.

He made the appeal while addressing the students at the Banquet Hall of the state’s Government House.

The president also assured that his government would ensure security around schools across Nigeria.

He said: “You students are very lucky, concentrate on your studies, don’t allow your terrible experiences in the hands of those heartless bandits distract you from your studies.

“Put behind all the sufferings and concentrate on your studies.

“The Federal Government will continue to strengthen security around all schools across the country.”

Buhari stressed that the abduction of the students was a deliberate attempt to test the will of his administration.

Recall that bandits had about a week ago abducted students of GSSS in Kankara area of the state.

Last night, the students were released, following the intervention of security agents and a social-cultural organisation.

HEALTH : COVID-19 second wave Nigeria records more deaths as NCDC confirms 806 new infections

 


The Nigeria Centre For Disease Control (NCDC) has recorded 806 new infections of COVID-19 in Nigeria as the country prepares for a second wave of the pandemic.

The NCDC made this known via its verified website on Friday night.

The health agency said that the country sadly recorded 11 additional deaths in the last 24 hours.

“Total reported deaths for today includes a cumulative of six deaths recorded in Gombe State over two days,” it said.

According to the NCDC, the new infections are from 25 states and the Federal Capital Territory (FCT)

.It also disclosed that 374 patients were discharged after testing negative from the virus.

The NCDC said that Lagos reported 287 cases, FCT, 255; Kaduna, 36; Akwa-Ibom, 29; Katsina, 25; Rivers, 25; Kwara, 21; Bauchi, 19; Kano, 15; Ondo, 14 and Plateau, 13.

Others include Yobe, 12; Nasarawa, 11; Ebonyi, nine; Gombe, eight; Abia, seven; Delta, four; Imo, four; Osun, three;
Anambra, two; Borno, two; Cross River, one; Edo, one; Ekiti, one; Jigawa, one and Ogun, one.

It noted that till date, 77,013 cases had been confirmed, 67,484, discharged and 1,212 deaths recorded in 36 states and the FCT.
